This famous wine has a very special and fascinating history. In fact, it seems that the German baron Giovanni Defuk, a prelate of Henry V, had a great passion for wines so that he entrusted his servant with the task of marking the doors of the taverns in which they were located with the word East (or there is). the best wines. When he arrived in Montefiascone he found a wine so good that it was marked with three “EST”. His master was in full agreement with him and drank so much of that wine that he died of it, in 1113. He was buried in the church of San Flaviano and the tombstone of his burial bears the inscription EST! EST !! EST !!! PROPTER NIMIUM EST EST HIC JOANNES DE FUK DOMINUS MEUS MORTUS EST.
Every year in memory of this event the Wine Fair is celebrated, which today also plays an important role in the promotion of this product. The events of Baron Giovanni Defuk are also reproduced through a beautiful historical procession. Other wineries in the area also participate in the festival with their wines.
