The Pizzicotto di Latera festival: a splendid food and wine event aimed at enhancing an appetizing typical Lateran delicacy: the pinch. It is a sort of meatball made of flour, water, salt and natural yeast, which takes its name from the way the dough is pinched to create a ball which is then cooked in boiling water. This dish, as good as it is humble, has its origins in the peasant world, where women created the best possible dishes with just a few ingredients at their disposal. The pinch festival is a historic event in the small village of Latera in the province of Viterbo which takes place every year for a weekend in the month of July.
